XWiki is a platform for building any type of collaborative web  
applications. We have several products that we've built on top of this  
platform:

You're talking about XWiki Enterprise? If that's the case I kind of  
agree that we could make it easy to create as many blogs as you want  
(especially as it's a no brainer).

If you're talking about XWiki Workspaces then it's already there...  
Maybe this is the product you're looking for?
