Hi Thomas,
There was some discussion around here not long ago about this, most of it is
here: http://www.nabble.com/Navigation-panel-tf3759045.html. This one should
be particularly helpful to you:

To edit your panels you need to go to
http://<server>/xwiki/bin/view/Panels/, they are all there.
