I've fixed this issue this morning. It'll be in XWiki 1.1 M2.

As a workaround you can go to:
http://<server>/xwiki/bin/edit/XWiki/XWikiPreferences?editor=object

And type in the first property (it's called "language").

The problem is that in your version the default language that you  
type in the admin screen isn't taken into account. This is fixed in  
1.1M2.

Right you shouldn't turn multilanguage on.
