I will upgrade the operating system hosting xwiki.org website this evening,
11 PM (Paris time - GMT+1). It shouldn't be any downtime, except if some
errors appears, but in this case, shouldn't take long.

From what I understood from Vincent and Thomas it is
very important to keep
current encoding setting for mysql, xwiki, tomcat

What's very important is to not break it and changing setting without
converting the data stored in the DB would.
If you want to convert it properly to UTF8 then it's great ;)
