We can add a custom style to pygment with https://pygments.org/docs/styledevelopment/ and a similar content to https://github.com/pygments/pygments/blob/master/pygments/styles/default.py .
Note that this default style should pass contrast checks, but somehow it doesn't. My guess is that we change the background color from its default and this creates issues.
