We upgraded the PostgreSQL connector in the 16.10.11 Docker image, this seems like the most likely reason. The issue XWIKI-23566 only mentions 16.10.12 but it was actually also applied to the 16.10.11 Docker image. You could try running XWiki with the version of the connector before that, so version 42.7.7 (which has a known CVE, which is why we upgraded).
