There is no such thing as stable-3.5, it's stable-3.5.x which mean it's the stable branch still in development (bugfixes). If you want the sources of the released 3.5 version you need to access the tags <repository name>-3.5. For example https://github.com/xwiki/xwiki-platform/tree/xwiki-platform-3.5 for xwiki-platform.
