I again reply to myself since I've found the "bug". Apparently I was doing something stupid, i.e. retrieving the default translation document and storing it again after having changed only its language field. Though this operation actually creates a new translation, it apparently confuses XWiki (producing the issue described in the previous message) By creating a new xwikiDocument from scratch and storing that new document things have started to work fine.
