Hello Alain, Sorry if Vincent was a little harsh on you, I'm sure he didn't mean it. The database IS the dump you found in /db/ (all 3 files), there are no other files involved. This is the way hsldb works, it keeps the database in memory and dumps it to the file every 20 seconds (default value). See http://hsqldb.org/doc/guide/ch01.html#N10248 for more details. Of course, this only works for small wikis, but this is what the standalone package is for, trying xwiki.
