It does work even after restart.
I think my problem is related to importing the database with the
UTF-8 encoding. It seems to be related to the blog class
"XWiki.ArticleClassSheet" or the blog class instances...

Well, I'm not able to have even KnowledgeBase working... Using exactly
the same settings (installed a minute ago from scratch, Linux,
tomcat-4.1.30, jdk1.4.2) I do have proper encoding, but unly until
I restart xwiki (BTW: did you try to restart it after entering some
utf-8 characters)? I will keep on trying...
