no effect on the menu or elsewhere.

This indicates what is the current wiki and the main

is "xwiki". When the wiki descriptor has a pretty name that's what is
displayed so in your case the way to display whatever you want is to
change the pretty name in the main wiki descriptor. The descriptor is
in XWiki.XWikiServerXwiki page but by default this page is empty for
the main wiki so you might have to create it:
* edit the page in object editor mode
(/xwiki/bin/edit/XWiki/XWikiServerXwiki?editor=object)
* add XWiki.XWkiServerClass object if there is none
* set what you want to display in the "Wiki pretty name" field of that
new object
