Thank you, the upgrade path from enterprise to manager is clearer for me now
with those pages.
One thing I still don't understand is once I will have upgraded my main Xwiki
as a manager, what should I do to migrate my other XWikis on it ?

Basically XEM is precndigured version of what you have with additional
helper plugins/applications so upgrade you farm like it was already a
XEM and it should be ok.
