First, note that you should perfectly be able to delete the admin user from your wiki and
everything should continue to work well.
There’s a very easy solution for this second question though. Just edit the admin user
profile page and set it as hidden. It won’t appear anymore in the user directory or other
places.

A complementary feature of course would be to
prevent the hidden user from
logging in. In our case, we are using Active Directory authentication so we
can take care of that outside of the xwiki software.
