Setting multi-lingual to yes does solve (or hide) the problem. So it
is the solution that we have applied although we don't need this
feature (we want all the pages in spanish).
From this tests it seems that there may be a bug in Xwiki when a
language other than english is set as the default on a non
multi-lingual site. Could this be true?

try to put it back to yes, unless you don't want multilingualism
