I cheated a bit and directly modified the
xwiki-enterprise-installer-debian-pgsql-common-5.0.1.deb package.

The MySQL issue is new to me, not sure I understand exactly the issue
you have but it's supposed to work well AFAIK. Will try to install it
from scratch.
