Is it a rendering issue? Can you reproduce it on the page content of a document instead of doing it in a property of an object? Can you give a complete example (copy/paste or xar export) where this is happening so we can reproduce it? Have a look at the stored content of  that property ($doc.getValue($fieldName)) and you will  probably notice that there are instructions (**something**)  in it to make it bold.
