TableMacro and TableBuilder is the right track
However I don't think creating {table style="foo"} is right.
I think you should go for
{table:class=mystyle}
which should add "mystyle" in the class added to the html <table tag in
the Table.java (currently provided by radeox)

If your modifications are different, I'd suggest to add them as
improvements to the {table:} radeox tag instead of a rewrite of this macro.
This way we can reintegrate them in the XWiki source
