I wish to create a wiki for hosting informations about a party we're organizing.
How do i choose my wiki name / how do i know if it's available ? I'd
like to use "cinqtulipes"

You can look at already existing wikis at
http://myxwiki.org/xwiki/bin/view/WikiManager/
user zuzur.
You should first create a user in myxwiki.org using the "Register" link.
