I changed logo the same like guided me xWiki's instruction. I have no idea
where is this option in xWiki properties, because I have been doing this
long time ago.
Unregistered users have just access to login site and to two xWiki's
spaces. And in these places I would like to see my own logo as a
unregistered user :-)

As I said, the only reason unregistered users wouldn’t be able to see
the logo is because you would have set permissions so that unregistered
users are not allowed to view some pages (especially the page containing
the new logo).
How did you change the logo and where did you put the new logo?
