Looks like you have a custom skin based on Toucan. Well, in the meantime the
Toucan CSS has changed a bit, you should integrate those changes back into
your skin.
Generally, it's a bad idea to copy and modify the base skin, you should
include it from your CSS and override the things you want changed. This way
it will be easier to upgrade.
Ok just setup a test instace using an un-modified version of Xwiki war
file and looks good so far!
The only problem I'm having now is knowing what to do in order to
customize the skin....

I was able to find out that some of the image files I was using are here:
xwiki-enterprise-web-3.1.1/bin/view/XWiki/DefaultSkin#Attachments
Now the question remains; if not edit the DefaultSkin property then how
using either the Admin interface or other do I copy the Toucan skin into a
new skin or just add extra 'properties'??? - sorry this part is really
confusing for me!
Like I have already 'wrongly' done, how do I change the background and
logo properties for EVERY document in my wiki and not affect the
DefaultSkin.
