 XWiki only provides 2 skins which I don't think are very appealing for

Yes, several of us are using it.
When I'll have some time I'll make a new version available with a more
recent bespin build so that we benefit from all the additions and
improvements made to bespin itself (copy/paste, search & replace, etc.)
