fact that users are in simple mode by default probably overrides this.
I think this default editor should be set to WYSIWYG by default and
new users should get the default editor as their editor, unless
they explicitely change it in their profiles.

Now to disable the WYSIWYG editor completely you'll need to change
template files, which isn't that easy.
I think it's better to fix whatever issue you have with the WYSIWYG
editor.
As you see I had also even taken the time to add documentation for
you...

Nope, never heard about this. You definitely need to
upgrade to 1.1
final. Lots of WYSIWYG bugs were fixed after 1.1M4.
